When world class cuisine springs up in your backyard, you’d best do two things: 1. Get in there and sample it before the place gets too crowded … and 2. Do the chef the honour of crowing to the world about it. Of course the second philanthropic deed exacerbates the inevitable popularisation of the joint – but then you can glow with urban vanity about discovering the place before the mob arrives.
